Ingredients

• zucchini, grated - 2 cups
• all-purpose flour - 1 ½ cups
• granulated sugar - ¾ cup
• brown sugar - ¼ cup
• baking powder - 1 teaspoon
• baking soda - ½ teaspoon
• salt - ½ teaspoon
• ground cinnamon - 1 teaspoon
• eggs - 2 large
• vegetable oil - ⅓ cup
• vanilla extract - 1 teaspoon
• chopped nuts (optional) - ½ cup

Instructions

   Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

   In a large bowl, combine the grated zucchini, eggs, vegetable oil, and vanilla extract.

   In another bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon.

   Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

   Fold in the chopped nuts if using.

   Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.

   Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

   Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
