Instructions

1.
Preheat the oven to 325°F (165°C).
2.
Mix chocolate wafer crumbs and melted butter; press into the bottom of a 9-inch springform pan.
3.
In a large bowl, beat cream cheese and sugar until smooth.
4.
Add vanilla and eggs, one at a time, mixing on low speed until just combined.
5.
Blend in heavy cream and melted chocolate chips until incorporated.
6.
Pour the batter over the crust and smooth the top.
7.
Bake for 50-60 minutes or until the center is set.
8.
Cool in the pan on a wire rack, then refrigerate for at least 4 hours.
9.
Before serving, drizzle with caramel sauce and sprinkle with chopped pecans.
