Ingredients

• Rice noodles - 200 grams
• Chicken breast - 300 grams, sliced
• Bell pepper - 1, sliced
• Carrot - 1, julienned
• Green onions - 2, chopped
• Peanut butter - 3 tablespoons
• Soy sauce - 2 tablespoons
• Lime juice - 1 tablespoon
• Garlic - 2 cloves, minced
• Ginger - 1 teaspoon, grated
• Cilantro - for garnish
• Sesame oil - 1 tablespoon

Instructions

   Cook the rice noodles according to package instructions; drain and set aside.

   In a large skillet, heat sesame oil over medium heat and sauté garlic and ginger until fragrant.

   Add the sliced chicken to the skillet, cooking until browned and cooked through.

   Stir in the bell pepper and carrot, cooking for another 3-4 minutes until vegetables are tender.

   In a bowl, mix peanut butter, soy sauce, and lime juice to create the sauce.

   Add the cooked noodles to the skillet, pour the sauce over, and toss everything together until well combined.
