Ingredients

• Small pearl tapioca - ½ cup
• Milk - 3 cups
• Sugar - ⅓ cup
• Salt - ¼ teaspoon
• Vanilla extract - 1 teaspoon
• Egg yolk - 1

Instructions

   Soak the tapioca in water for about 30 minutes, then drain.

   In a medium saucepan, bring the milk to a simmer over medium heat, stirring frequently.

   Add the soaked tapioca, sugar, and salt to the milk. Stir to combine.

   Cook the mixture on low heat, stirring constantly, until the tapioca is fully transparent, about 15 minutes.

   In a small bowl, beat the egg yolk. Add a few tablespoons of the hot tapioca mixture to the egg yolk to temper, then stir it back into the saucepan.

   Continue cooking for another 2-3 minutes until the pudding thickens.

   Remove from heat and stir in the vanilla extract.

   Allow to cool slightly before serving, or refrigerate and serve chilled.
