Ingredients

• Graham cracker crumbs - 1 and ½ cups
• Unsalted butter, melted - ¼ cup
• Cream cheese, softened - 24 oz
• Granulated sugar - 1 cup
• Vanilla extract - 1 teaspoon
• Eggs - 3 large
• Sour cream - ½ cup
• Fresh strawberries, pureed - 1 cup
• Cornstarch - 1 tablespoon

Instructions

   Preheat the oven to 325°F (160°C).

   Mix graham cracker crumbs and melted butter; press into a 9-inch springform pan.

   In a large bowl, beat cream cheese and sugar until smooth.

   Add vanilla, then eggs one at a time, mixing on low speed.

   Blend in sour cream until just combined.

   Pour the cheesecake mixture over the crust.

   In a small bowl, combine strawberry puree and cornstarch.

   Drop spoonfuls of strawberry mixture over the cheesecake, and swirl with a knife.

   Bake for 45-50 minutes, or until center is set.

    Cool at room temperature, then refrigerate for at least 4 hours before serving.
