Ingredients

• Pitted dates - 1 cup
• Boiling water - 1 cup
• Baking soda - 1 teaspoon
• Butter - ½ cup
• Brown sugar - ¾ cup
• Eggs - 2
• Vanilla extract - 1 teaspoon
• All-purpose flour - 1 cup
• Baking powder - 1 teaspoon
• Salt - ¼ teaspoon
• Heavy cream - 1 cup
• Dark brown sugar - 1 cup
• Unsalted butter - ¼ cup

Instructions

   Preheat the oven to 180°C (350°F). Grease an 8-inch square baking dish.

   Chop the dates and soak them in boiling water with baking soda for 15 minutes.

   Cream together butter and brown sugar until light and fluffy. Beat in the eggs one at a time and add vanilla extract.

   Sift together flour, baking powder, and salt. Gradually add to the butter mixture and mix until combined.

   Stir in the soaked dates along with their liquid.

   Pour the batter into the prepared baking dish and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

   To make the toffee sauce, combine heavy cream, dark brown sugar, and unsalted butter in a saucepan. Bring to a boil over medium heat, stirring constantly, until the sugar dissolves and the sauce thickens slightly.

   Serve the pudding warm, drizzled with the toffee sauce.
