Ingredients

• Broccoli - 1 pound, chopped
• Butter - 2 tablespoons
• Onion - 1 small, chopped
• Garlic - 2 cloves, minced
• Vegetable broth - 4 cups
• Heavy cream - 1 cup
• Salt - to taste
• Black pepper - to taste

Instructions

   Melt butter in a large pot over medium heat.

   Add onion and garlic, sauté until softened, about 5 minutes.

   Add chopped broccoli and vegetable broth to the pot.

   Bring to a boil, then reduce heat and simmer until broccoli is tender, about 10 minutes.

   Using an immersion blender, puree the soup until smooth.

   Stir in heavy cream and season with salt and pepper to taste.

   Heat through but do not boil, then serve hot.
