Ingredients

• Dark chocolate - 200g
• Heavy cream - 1 cup
• Eggs - 3 large, separated
• Sugar - 2 tablespoons
• Vanilla extract - 1 teaspoon
• Salt - a pinch

Instructions

   Melt the dark chocolate in a heatproof bowl over simmering water.

   In a separate bowl, whisk the egg yolks with sugar until pale and creamy.

   Add melted chocolate and vanilla extract to the egg yolk mixture and stir until well combined.

   Beat the egg whites with a pinch of salt until stiff peaks form.

   In another bowl, whip the heavy cream until soft peaks form.

   Gently fold the whipped cream into the chocolate mixture.

   Carefully fold in the beaten egg whites until fully incorporated.

   Spoon the mousse into serving glasses and chill in the refrigerator for at least 2 hours before serving.
