Ingredients

• rice noodles - 8 ounces
• shrimp - 1 pound, peeled and deveined
• vegetable oil - 2 tablespoons
• garlic - 3 cloves, minced
• egg - 2, lightly beaten
• bean sprouts - 1 cup
• green onions - ¼ cup, chopped
• peanut butter - 3 tablespoons
• soy sauce - 3 tablespoons
• fish sauce - 1 tablespoon
• lime juice - 2 tablespoons
• crushed peanuts - ¼ cup, for topping
• cilantro - ¼ cup, for garnish

Instructions

   Cook the rice noodles according to package instructions, then drain and set aside.

   In a large skillet or wok, heat the vegetable oil over medium-high heat.

   Add the minced garlic and shrimp, cooking until shrimp is pink, about 2-3 minutes.

   Push the shrimp to the side of the pan and pour in the beaten eggs, scrambling until cooked.

   Add the cooked noodles, bean sprouts, and green onions to the skillet.

   In a small bowl, mix together the peanut butter, soy sauce, fish sauce, and lime juice.

   Pour the sauce over the noodle mixture, tossing everything together until well coated and heated through.

   Serve the noodle bowl topped with crushed peanuts and fresh cilantro.
