Ingredients

• Italian sausage - 1 pound
• bell peppers (red, yellow, green) - 3, sliced
• red onion - 1, sliced
• garlic - 4 cloves, minced
• olive oil - 2 tablespoons
• Italian seasoning - 1 teaspoon
• salt - to taste
• black pepper - to taste

Instructions

   Preheat the oven to 400°F (200°C).

   On a large sheet pan, combine the sliced bell peppers, red onion, and minced garlic.

   Drizzle with olive oil and sprinkle with Italian seasoning, salt, and black pepper. Toss to coat.

   Arrange the Italian sausage on top of the vegetables.

   Roast in the preheated oven for 25-30 minutes, or until the sausage is cooked through and the vegetables are tender.
