Ingredients

• Unsalted butter - ½ cup
• Brown sugar - ¾ cup
• Pineapple slices - 1 can (20 oz)
• Maraschino cherries - 8-10
• All-purpose flour - 1 ¾ cups
• Baking powder - 2 teaspoons
• Salt - ½ teaspoon
• Granulated sugar - 1 cup
• Eggs - 2
• Vanilla extract - 1 teaspoon
• Milk - ½ cup

Instructions

   Preheat the oven to 180°C (350°F).

   Melt butter in a 9-inch round cake pan over low heat.

   Sprinkle brown sugar evenly over the melted butter.

   Arrange pineapple slices on top of the brown sugar and place a cherry in the center of each slice.

   In a bowl, sift together flour, baking powder, and salt.

   In another bowl, cream together granulated sugar and eggs until light and fluffy.

   Mix in vanilla extract.

   Alternately add the flour mixture and milk to the egg mixture, starting and ending with the flour.

   Pour the batter over the pineapple slices in the cake pan.

    Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.

    Allow the cake to cool for 5 minutes, then invert onto a serving plate.

    Serve warm or at room temperature.
