Ingredients

• all-purpose flour - 1 ½ cups
• granulated sugar - 1 cup
• baking powder - 1 ½ teaspoons
• baking soda - ½ teaspoon
• salt - ¼ teaspoon
• eggs - 2 large
• milk - ½ cup
• vegetable oil - ⅓ cup
• vanilla extract - 1 teaspoon
• creamy peanut butter - ½ cup
• powdered sugar - 2 cups
• unsalted butter - ½ cup
• heavy cream - 2 tablespoons

Instructions

   Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.

   In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

   In another bowl, mix the eggs, milk, oil, vanilla extract, and peanut butter until well combined.

   Pour the wet ingredients into the dry ingredients and mix until just combined.

   Fill each cupcake liner about 2/3 full with the batter.

   Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

   Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

   In a mixing bowl, beat the unsalted butter until creamy, then gradually add the powdered sugar, mixing until well combined.

   Add the heavy cream and more peanut butter, beating until smooth and fluffy.
