Ingredients

• All-purpose flour - 1 ¼ cups
• Baking soda - ½ teaspoon
• Salt - ¼ teaspoon
• Unsalted butter - ½ cup (1 stick), softened
• Creamy peanut butter - ½ cup
• Granulated sugar - ½ cup
• Packed brown sugar - ½ cup
• Egg - 1 large
• Vanilla extract - 1 teaspoon

Instructions

   Preheat the oven to 180°C (350°F) and line baking sheets with parchment paper.

   In a bowl, whisk together flour, baking soda, and salt; set aside.

   In a large bowl, beat the butter, peanut butter, granulated sugar, and brown sugar until creamy.

   Add the egg and vanilla extract to the butter mixture and beat until well combined.

   Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

   Scoop tablespoon-sized balls of dough onto the prepared baking sheets, leaving space between each cookie.

   Flatten each ball slightly with a fork to create a crisscross pattern.

   Bake for 10-12 minutes or until the edges are golden brown.

   Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
