Ingredients

• Graham cracker crumbs - 1 ½ cups
• Butter - ½ cup, melted
• Cream cheese - 24 oz, softened
• Granulated sugar - 1 cup
• Vanilla extract - 1 teaspoon
• Eggs - 4 large
• Passion fruit pulp - 1 cup
• Cornstarch - 1 tablespoon
• Water - 2 tablespoons

Instructions

   Preheat the oven to 325°F (160°C).

   Combine graham cracker crumbs and melted butter in a bowl, then press into the bottom of a 9-inch springform pan.

   In a large bowl, beat the cream cheese until smooth, then add sugar and vanilla extract.

   Add eggs one at a time, beating well after each addition.

   Pour the cheesecake mixture over the crust in the springform pan.

   Bake for 50-60 minutes or until the center is set.

   While the cheesecake is baking, prepare the passion fruit glaze by mixing passion fruit pulp, cornstarch, and water in a saucepan.

   Cook over medium heat, stirring constantly, until the mixture thickens.

   Once the cheesecake is done, let it cool, then pour the passion fruit glaze over the top.

    Chill in the refrigerator for at least 4 hours before serving.
