Ingredients

• Honey - 1 cup
• Granulated Sugar - 1 ½ cups
• Egg Whites - 2 large
• Salt - ¼ teaspoon
• Vanilla Extract - 1 teaspoon
• Roasted Almonds - 1 cup
• Roasted Pistachios - 1 cup
• Wafer Paper - as needed

Instructions

   Line a baking dish with wafer paper and set aside.

   In a saucepan over medium heat, combine honey and sugar. Stir until the sugar dissolves.

   Increase heat and bring the mixture to a boil, using a candy thermometer to reach 290°F (143°C).

   Meanwhile, in a separate bowl, beat egg whites with salt until stiff peaks form.

   Slowly pour the hot syrup into the egg whites, continuously whisking to combine.

   Add vanilla extract and continue to beat until the mixture thickens and becomes glossy.

   Fold in the roasted almonds and pistachios.

   Pour the nougat mixture into the prepared baking dish, smoothing the top with a spatula.

   Cover with another layer of wafer paper and let it cool completely.

10. 10.

    Once set, cut the nougat into desired pieces and serve.
