Ingredients

• Graham cracker crumbs - 1 ½ cups
• Unsalted butter, melted - ¼ cup
• Granulated sugar - ¼ cup
• Cream cheese, softened - 8 ounces
• Powdered sugar - ½ cup
• Vanilla extract - 1 teaspoon
• Heavy whipping cream - 1 cup
• Mixed berries (strawberries, blueberries, raspberries) - 2 cups
• Mint leaves (for garnish) - optional

Instructions

   In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.

   Press the mixture firmly into the bottom and up the sides of a 9-inch tart pan. Chill in the refrigerator for 15 minutes.

   In a large mixing bowl, beat the softened cream cheese until smooth.

   Add powdered sugar and vanilla extract to the cream cheese, and continue to beat until well combined.

   In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth.

   Pour the filling into the chilled crust and spread evenly.

   Top with mixed berries, arranging them as desired.

   Chill the tart in the refrigerator for at least 2 hours before serving.

   Garnish with mint leaves if desired, slice, and enjoy!
