Ingredients

• All-purpose flour - 1 cup
• Cocoa powder - ½ cup
• Instant coffee granules - 2 tablespoons
• Unsalted butter - ½ cup
• Granulated sugar - 1 cup
• Brown sugar - ½ cup
• Large eggs - 3
• Vanilla extract - 1 teaspoon
• Salt - ½ teaspoon
• Dark chocolate, chopped - 1 cup

Instructions

   Preheat the oven to 180°C (350°F) and line a 9x13 inch baking pan with parchment paper.

   In a small bowl, dissolve the instant coffee granules in 2 tablespoons of hot water.

   In a large saucepan over medium heat, melt the butter. Remove from heat and stir in the granulated sugar, brown sugar, and coffee mixture until well combined.

   Beat in the eggs, one at a time, then add the vanilla extract.

   In a separate bowl, whisk together the flour, cocoa powder, and salt.

   Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

   Fold in the chopped dark chocolate.

   Pour the batter into the prepared baking pan and spread evenly.

   Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

    Allow to cool in the pan before cutting into squares and serving.
