Ingredients

• heavy cream - 2 cups
• whole milk - 1 cup
• granulated sugar - ¾ cup
• fresh mint leaves - 1 cup
• vanilla extract - 1 teaspoon
• green food coloring - a few drops
• bittersweet chocolate chips - ½ cup
• salt - a pinch

Instructions

   In a saucepan, combine the heavy cream, whole milk, and sugar over medium heat. Stir until the sugar is dissolved.

   Add the fresh mint leaves to the mixture, bring to a gentle simmer, and then remove from heat. Cover and let steep for 30 minutes.

   Strain the mixture to remove the mint leaves, then return to the saucepan.

   Stir in the vanilla extract, a pinch of salt, and a few drops of green food coloring until well combined.

   Chill the mixture in the refrigerator for at least 2 hours or until completely cold.

   Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.

   In the last few minutes of churning, add the bittersweet chocolate chips.

   Transfer the ice cream to a container and freeze for at least 4 hours, or until firm.

   Scoop and serve your homemade mint chocolate ice cream!
