Ingredients

• heavy cream - 2 cups
• whole milk - 1 cup
• granulated sugar - ¾ cup
• fresh mint leaves - 1 cup
• vanilla extract - 1 teaspoon
• green food coloring - a few drops
• chocolate chips - ½ cup
• salt - a pinch

Instructions

   In a medium saucepan, combine the heavy cream, whole milk, and sugar over medium heat. Stir until the sugar is dissolved.

   Add the fresh mint leaves and bring the mixture to a simmer. Remove from heat and let it steep for 30 minutes.

   Strain the mixture to remove the mint leaves and return it to the saucepan. Stir in the vanilla extract, a pinch of salt, and a few drops of green food coloring until desired color is achieved.

   Chill the mixture in the refrigerator for at least 2 hours, or until completely cold.

   Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.

   During the last few minutes of churning, add the chocolate chips.

   Transfer the churned ice cream to an airtight container and freeze for at least 4 hours, or until firm.

   Scoop, serve, and enjoy your homemade mint chocolate chip ice cream!
