Ingredients

• Unsalted butter - 1 cup
• Semi-sweet chocolate chips - 1 cup
• Granulated sugar - 1.5 cups
• Eggs - 3 large
• Vanilla extract - 2 teaspoons
• All-purpose flour - 1 cup
• Cocoa powder - ½ cup
• Salt - ½ teaspoon
• Mint extract - 1 teaspoon
• Green food coloring - optional, a few drops
• Powdered sugar - 1 cup
• Heavy cream - ¼ cup
• Dark chocolate chips - ½ cup

Instructions

   Preheat the oven to 180°C (350°F) and line a 9x13 inch baking pan with parchment paper.

   Melt the butter and semi-sweet chocolate chips together in a microwave or on the stovetop, stirring until smooth.

   In a large bowl, whisk together the sugar, eggs, and vanilla extract until well combined.

   Gradually add the melted chocolate mixture to the sugar mixture, stirring constantly.

   Sift in the flour, cocoa powder, and salt, and fold until just combined.

   Pour the batter into the prepared baking pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

   Allow the brownies to cool completely in the pan.

   For the mint layer, beat the powdered sugar, butter, mint extract, and heavy cream until smooth and creamy. Add green food coloring if desired.

   Spread the mint mixture evenly over the cooled brownies.

    Melt the dark chocolate chips and drizzle over the mint layer.

    Chill the brownies in the refrigerator for at least 30 minutes before slicing and serving.
