Ingredients

• Chocolate cookie crumbs - 1 ½ cups
• Unsalted butter, melted - ¼ cup
• Cream cheese, softened - 24 oz
• Granulated sugar - 1 cup
• Large eggs - 3
• Peppermint extract - 1 ½ teaspoons
• Green food coloring - a few drops
• Heavy cream - ½ cup
• Mini chocolate chips - 1 cup

Instructions

   Preheat the oven to 325°F (160°C).

   In a bowl, combine chocolate cookie crumbs and melted butter.

   Press the mixture into the bottom of a 9-inch springform pan.

   In a large mixing bowl, beat the cream cheese until smooth.

   Add in sugar and mix until well combined.

   Add eggs one at a time, mixing well after each addition.

   Stir in peppermint extract and a few drops of green food coloring.

   Fold in heavy cream and mini chocolate chips.

   Pour the batter over the crust in the springform pan.

    Bake for 50-55 minutes, or until the center is set.

    Let it cool to room temperature, then refrigerate for at least 4 hours before serving.
