Ingredients

• all-purpose flour - 1 ¼ cups
• unsalted butter - ½ cup
• granulated sugar - ¼ cup
• egg yolks - 2
• cold water - 2-3 tablespoons
• lemons - 3, juiced and zested
• heavy cream - ½ cup
• granulated sugar - 1 cup
• whole eggs - 3
• vanilla extract - 1 teaspoon

Instructions

   Preheat the oven to 350°F (175°C).

   In a mixing bowl, combine flour, butter, and sugar. Mix until crumbly.

   Add egg yolks and cold water, mixing until the dough forms. Chill for 30 minutes.

   Roll out the dough and press it into a tart pan. Prick the bottom with a fork.

   Bake the crust for 15 minutes, then remove and let cool.

   In another bowl, whisk together lemon juice, lemon zest, heavy cream, sugar, eggs, and vanilla until smooth.

   Pour the lemon mixture into the cooled crust.

   Bake for an additional 25-30 minutes, or until the filling is set.

   Let the tart cool to room temperature before serving.

    Serve chilled, optionally garnished with powdered sugar or whipped cream.
