Ingredients

• Pie crust - 1 pre-made 9-inch crust
• Granulated sugar - 1 cup
• Cornstarch - ¼ cup
• Water - 1 ½ cups
• Lemon juice - ½ cup
• Lemon zest - 1 tablespoon
• Egg yolks - 4
• Butter - 2 tablespoons
• Egg whites - 4
• Cream of tartar - ¼ teaspoon
• Powdered sugar - ½ cup

Instructions

   Preheat the oven to 180°C (350°F).

   Prepare the pie crust in a 9-inch pie pan and bake for 10 minutes.

   In a saucepan, mix granulated sugar and cornstarch, then gradually stir in water, lemon juice, and lemon zest.

   Cook over medium heat until thickened and bubbly.

   Reduce heat, stir in egg yolks and butter, and cook for 2 more minutes, then remove from heat.

   Pour lemon filling into the baked pie crust.

   In a bowl, beat egg whites and cream of tartar until soft peaks form.

   Gradually add powdered sugar, beating until stiff peaks form.
