Ingredients

• All-purpose flour - 1 ½ cups
• Granulated sugar - 1 cup
• Baking powder - 1 ½ teaspoons
• Salt - ¼ teaspoon
• Unsalted butter - ½ cup, softened
• Eggs - 2 large
• Milk - ½ cup
• Lemon zest - 1 tablespoon
• Lemon juice - ¼ cup
• Powdered sugar - 1 cup
• Additional lemon juice - 2 tablespoons

Instructions

   Preheat the oven to 180°C (350°F) and line a 12-cup muffin tin with cupcake liners.

   In a bowl, whisk together the flour, baking powder, and salt.

   In another bowl, beat the butter and granulated sugar until light and fluffy.

   Add the eggs one at a time, beating well after each addition.

   Mix in the lemon zest and juice.

   Gradually add the dry ingredients to the wet mixture, alternating with milk, beginning and ending with flour.

   Divide the batter evenly among the cupcake liners.

   Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

   Let cupcakes cool completely on a wire rack.

    For the drizzle, mix the powdered sugar with additional lemon juice until smooth.

    Drizzle over the cooled cupcakes before serving.
