Ingredients

• All-purpose flour - 1 ½ cups
• Granulated sugar - 1 cup
• Baking powder - 1 ½ teaspoons
• Salt - ¼ teaspoon
• Unsalted butter - ½ cup
• Eggs - 2 large
• Vanilla extract - 1 teaspoon
• Milk - ½ cup
• Lemon zest - 1 tablespoon
• Lemon juice - 2 tablespoons
• Lemon curd - ½ cup
• Powdered sugar - 1 cup
• Cream cheese - 4 ounces

Instructions

   Preheat the oven to 180°C (350°F) and line a cupcake tray with paper liners.

   In a bowl, whisk together flour, baking powder, and salt.

   In another bowl, beat the butter and sugar until light and fluffy.

   Add eggs one at a time, then mix in vanilla, lemon zest, and lemon juice.

   Gradually add the dry ingredients to the wet mixture, alternating with milk.

   Fill the cupcake liners 2/3 full with batter.

   Bake for 18-20 minutes or until a toothpick inserted comes out clean.

   Allow cupcakes to cool, then cut a small circle out of the top of each cupcake.

   Fill the holes with lemon curd and replace the cupcake tops.

    Make the frosting by beating cream cheese and powdered sugar until smooth.

    Frost the cupcakes and serve.
