Ingredients

• all-purpose flour - 1 ½ cups
• granulated sugar - 1 cup
• baking powder - 1 ½ teaspoons
• salt - ½ teaspoon
• unsalted butter - ½ cup, softened
• large eggs - 2
• vanilla extract - 2 teaspoons
• milk - ½ cup
• rainbow sprinkles - ½ cup
• powdered sugar - 2 cups
• heavy cream - 3 tablespoons
• additional sprinkles for topping - as needed

Instructions

   Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.

   In a large bowl, whisk together the flour, sugar, baking powder, and salt.

   Add the softened butter and mix until crumbly.

   In another bowl, beat the eggs, then add vanilla extract and milk. Mix well.

   Pour the wet ingredients into the dry ingredients and stir until just combined.

   Fold in the rainbow sprinkles gently.

   Divide the batter evenly among the cupcake liners, filling each about 2/3 full.

   Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.

   Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

    For the frosting, beat together the powdered sugar and heavy cream until smooth and creamy.

    Frost the cooled cupcakes and top with additional sprinkles as desired.
