Ingredients

• Dark chocolate - 200 grams
• Heavy cream - 1 cup
• Egg whites - 2
• Caster sugar - 2 tablespoons
• Vanilla extract - 1 teaspoon

   Melt the dark chocolate in a heatproof bowl set over a saucepan of simmering water. Stir until smooth and let it cool slightly.

   In a separate bowl, whip the heavy cream until soft peaks form. Set aside.

   In another bowl, beat the egg whites until frothy. Gradually add the caster sugar, continuing to beat until stiff peaks form.

   Gently fold the melted chocolate into the whipped cream, then add the vanilla extract.

   Carefully fold the beaten egg whites into the chocolate mixture until fully incorporated.

   Divide the mousse among serving dishes and refrigerate for at least 2 hours before serving.
