Ingredients

• All-purpose flour - 2 cups
• Granulated sugar - ½ cup

• Unsalted butter - ½ cup (1 stick), chilled and cubed
• Heavy cream - ¾ cup

• Fresh strawberries - 1 pound, hulled and sliced
• Whipped cream - 2 cups

Instructions

   Preheat the oven to 220°C (425°F).

   In a large bowl, whisk together flour, sugar, baking powder, and salt.

   Cut in the butter until the mixture resembles coarse crumbs.

   In a small bowl, whisk together cream, egg, and vanilla.

   Add the wet ingredients to the dry ingredients, mixing until just combined.

   Turn the dough onto a floured surface and gently knead a few times.

   Roll out the dough to about 1-inch thickness and cut into rounds using a biscuit cutter.

   Place the rounds on a baking sheet and bake for 12-15 minutes, until golden brown.

   Let the shortcakes cool on a wire rack.

    To assemble, split the shortcakes in half and layer with strawberries and whipped cream.
