Ingredients

• whole duck - 1 (about 5-6 lbs)
• salt - 2 tablespoons
• black pepper - 1 teaspoon
• five-spice powder - 1 tablespoon
• honey - 2 tablespoons
• soy sauce - 2 tablespoons
• rice vinegar - 1 tablespoon
• water - 1 cup

Instructions

   Preheat the oven to 375°F (190°C).

   Clean the duck and pat it dry with paper towels.

   Rub the duck all over with salt, black pepper, and five-spice powder, making sure to season the cavity as well.

   In a small bowl, mix the honey, soy sauce, and rice vinegar. Brush this mixture over the duck.

   Place the duck on a rack in a roasting pan and pour water into the bottom of the pan.

   Roast the duck in the preheated oven for about 1.5 hours, basting with the pan juices every 30 minutes.

   Increase the oven temperature to 400°F (200°C) and roast for an additional 15-20 minutes to crisp the skin.

   Remove the duck from the oven and let it rest for 10-15 minutes before carving.
