Ingredients

• Rolled oats - 2 cups
• All-purpose flour - 1 cup
• Brown sugar - 1 cup
• Granulated sugar - ½ cup
• Unsalted butter - 1 cup, softened

Instructions

   Preheat the oven to 180°C (350°F) and line baking sheets with parchment paper.

   In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

   Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.

   In another bowl, whisk together the flour, baking soda, salt, and ground cinnamon.

   Stir in the rolled oats until evenly distributed.

   Drop tablespoonfuls of the dough onto the prepared baking sheets, leaving space between each cookie.

   Bake in the preheated oven for 12 to 15 minutes, or until the edges are golden brown.

   Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
