Ingredients

• All-purpose flour - 2 cups
• Granulated sugar - ½ cup
• Baking powder - 1 tablespoon
• Salt - ½ teaspoon
• Unsalted butter - ½ cup (1 stick)
• Heavy cream - ¾ cup
• Vanilla extract - 1 teaspoon
• Fresh strawberries - 1 pint
• Whipped cream - 1 cup

Instructions

   Preheat the oven to 200°C (400°F).

   In a large bowl, whisk together the flour, sugar, baking powder, and salt.

   Cut in the butter until the mixture resembles coarse crumbs.

   Stir in the heavy cream and vanilla extract until just combined.

   Turn the dough onto a floured surface and gently knead a few times.

   Roll out the dough to about 1-inch thickness and cut into rounds.

   Place the rounds on a baking sheet and bake for 15-18 minutes until golden.

   Cool the shortcakes on a wire rack.

   Slice the strawberries and mix them with a little sugar if desired.

    To assemble, split the shortcakes in half, layer with strawberries and whipped cream, and top with the other half.
