Ingredients

• All-purpose flour - 1 cup
• Granulated sugar - ⅔ cup
• Unsalted butter - ½ cup, melted and cooled
• Large eggs - 2
• Vanilla extract - 1 teaspoon
• Lemon zest - 1 teaspoon
• Baking powder - 1 teaspoon
• Salt - ¼ teaspoon

Instructions

   Preheat the oven to 190°C (375°F) and butter a madeleine pan.

   In a bowl, whisk together flour, baking powder, and salt.

   In another bowl, beat eggs and sugar until thick and pale.

   Fold in the vanilla extract and lemon zest.

   Gently fold the dry ingredients into the egg mixture.

   Add the melted butter gradually, folding gently until just combined.

   Spoon the batter into the madeleine pan, filling each mold about 3/4 full.

   Bake for 10-12 minutes or until the edges are golden brown.

   Remove from the oven and let cool for a few minutes before transferring to a wire rack.
