Ingredients

• All-purpose flour - 1 and ¼ cups
• Cocoa powder - ½ cup
• Baking soda - ½ teaspoon
• Salt - ¼ teaspoon
• Unsalted butter - ½ cup
• Granulated sugar - ¾ cup
• Brown sugar - ¼ cup
• Egg - 1 large
• Vanilla extract - 1 teaspoon
• Vanilla ice cream - 1 quart

Instructions

   Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

   In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.

   In a separate bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.

   Add the egg and vanilla extract to the butter mixture and mix well.

   Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

   Drop tablespoons of dough onto the prepared baking sheet, spacing them 2 inches apart.

   Bake for 10-12 minutes, or until the cookies are set but still soft.

   Allow the cookies to cool completely on a wire rack.

   Once cooled, place a scoop of vanilla ice cream between two cookies and gently press together.

    Wrap each ice cream sandwich in plastic wrap and freeze for at least 30 minutes before serving.
