Ingredients

• Unsalted butter - 2 tablespoons
• Granulated sugar - ⅓ cup
• Bittersweet chocolate - 120 grams
• Egg yolks - 3 large
• Egg whites - 4 large
• Cream of tartar - ¼ teaspoon
• Salt - 1/8 teaspoon
• Vanilla extract - 1 teaspoon

Instructions

   Preheat the oven to 200°C (400°F). Grease the soufflé dishes with butter and coat with sugar.

   Melt the chocolate and butter together in a heatproof bowl over simmering water.

   In a separate bowl, whisk egg yolks until thick and pale. Stir in the melted chocolate mixture.

   In another bowl, beat egg whites until foamy, add cream of tartar and salt, and continue beating until soft peaks form.

   Gradually add sugar to the egg whites, beating until stiff peaks form.

   Gently fold the egg whites into the chocolate mixture in batches, adding vanilla extract in the process.

   Pour the mixture into prepared dishes and run a thumb around the edge to help the soufflé rise evenly.

   Bake for 12-15 minutes until the soufflés have risen and have a slight wobble in the center.

   Serve immediately.
