Ingredients

• Water - 1 cup
• Unsalted butter - ½ cup
• All-purpose flour - 1 cup
• Salt - ¼ teaspoon
• Eggs - 4 large
• Whole milk - 2 cups
• Granulated sugar - ½ cup
• Vanilla extract - 1 teaspoon
• Cornstarch - ¼ cup
• Egg yolks - 4
• Semi-sweet chocolate - 4 ounces
• Heavy cream - ½ cup

Instructions

   Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.

   In a saucepan, bring water and butter to a boil. Add flour and salt, stir until mixture forms a ball.

   Transfer dough to a bowl. Add eggs one at a time, beating well after each addition.

   Pipe the dough onto the baking sheet into 4-inch long strips.

   Bake for 15 minutes, then reduce the oven temperature to 180°C (350°F) and bake for another 20 minutes.

   For the pastry cream, heat milk and half the sugar in a saucepan until simmering.

   In a bowl, whisk egg yolks, remaining sugar, and cornstarch. Gradually whisk in hot milk.

   Return mixture to the saucepan, cooking until thickened. Stir in vanilla, then cool completely.

   For the glaze, heat cream until steaming, pour over chopped chocolate, and stir until smooth.

    Cut eclairs in half lengthwise, fill with pastry cream, and dip tops in chocolate glaze.

    Refrigerate until set, then serve.
