Ingredients

• Butter - 2 tablespoons

• Whole milk - ¾ cup
• Dark chocolate - 120 grams, chopped
• Vanilla extract - 1 teaspoon
• Egg yolks - 3 large
• Egg whites - 4 large
• Granulated sugar - ¼ cup
• Salt - ¼ teaspoon

Instructions

   Preheat the oven to 200°C (400°F) and butter the ramekins.

   In a saucepan, melt butter over medium heat, add flour, and whisk until smooth.

   Gradually add milk, whisking constantly until thickened, then remove from heat.

   Stir in chocolate and vanilla until smooth, then whisk in egg yolks.

   In a separate bowl, beat egg whites and salt until soft peaks form.

   Gradually add sugar, beating until stiff, glossy peaks form.

   Fold one-third of the egg whites into the chocolate mixture to lighten, then gently fold in the remaining whites.

   Divide the batter among the prepared ramekins and place them on a baking sheet.

   Bake for 12-15 minutes until soufflés have risen and tops are set.
