Ingredients

• Dark chocolate - 120 grams
• Butter - 2 tablespoons
• Egg yolks - 3
• Egg whites - 4
• Sugar - ¼ cup
• Vanilla extract - 1 teaspoon
• Salt - ¼ teaspoon
• Cocoa powder - 1 tablespoon

Instructions

   Preheat the oven to 200°C (400°F) and grease 4 ramekins with butter.

   Melt the dark chocolate and butter together in a heatproof bowl over simmering water, stirring until smooth.

   Remove from heat and stir in egg yolks, one at a time, until well combined.

   In a separate bowl, beat egg whites with salt until soft peaks form, then gradually add sugar and continue to beat until stiff peaks form.

   Gently fold the egg whites into the chocolate mixture in thirds, being careful not to deflate the batter.

   Divide the mixture evenly among the prepared ramekins and dust the tops with cocoa powder.

   Place the ramekins on a baking tray and bake for 12-15 minutes, until the soufflés have risen and the tops are set.

   Serve immediately for the best texture.
