Ingredients

• Dark chocolate - 200 grams
• Heavy cream - 1 cup
• Eggs - 3, separated
• Sugar - 2 tablespoons
• Vanilla extract - 1 teaspoon
• Salt - a pinch

Instructions

   Melt the dark chocolate in a heatproof bowl over a pot of simmering water, stirring until smooth.

   Remove the chocolate from the heat and let it cool slightly.

   In a separate bowl, whip the heavy cream until soft peaks form, then refrigerate.

   Beat the egg whites with a pinch of salt until soft peaks, then gradually add sugar and continue to beat until stiff peaks form.

   Fold the egg yolks into the melted chocolate along with the vanilla extract.

   Gently fold the whipped cream into the chocolate mixture until combined.

   Finally, fold in the beaten egg whites until no streaks remain.

   Spoon the mousse into individual serving glasses and chill in the refrigerator for at least 2 hours before serving.
