Ingredients

• Unsalted butter - 1 cup
• Granulated sugar - 2 cups
• Large eggs - 4
• Vanilla extract - 1 teaspoon
• Peppermint extract - 1 teaspoon
• All-purpose flour - 1 cup
• Unsweetened cocoa powder - ¾ cup
• Salt - ½ teaspoon
• Chocolate chips - 1 cup
• Heavy cream - ½ cup
• Fresh mint leaves - ¼ cup, chopped

Instructions

   Preheat the oven to 175°C (350°F) and grease a 9x13 inch baking pan.

   In a saucepan, melt the butter over medium heat. Remove from heat and stir in sugar, eggs, vanilla, and peppermint extract.

   In a separate bowl, mix together flour, cocoa powder, and salt.

   Gradually add the dry ingredients to the wet mixture, stirring until just combined.

   Fold in the chocolate chips and pour the batter into the prepared pan.

   Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.

   While the brownies are cooling, heat heavy cream in a small saucepan until it begins to simmer.

   Remove from heat and add chopped mint leaves. Let steep for 10 minutes, then strain out the mint.

   Add chocolate chips to the warm cream and stir until smooth to create a glaze.

    Pour the mint-chocolate glaze over the cooled brownies and spread evenly.

    Allow the glaze to set before cutting into squares and serving.
