Ingredients

• brown sugar - 1 cup
• cornstarch - ¼ cup
• salt - ¼ teaspoon
• milk - 2 cups
• unsalted butter - 2 tablespoons
• vanilla extract - 1 teaspoon
• egg yolks - 2

Instructions

   In a medium saucepan, whisk together the brown sugar, cornstarch, and salt.

   Gradually add the milk while whisking to combine the dry ingredients smoothly.

   Cook the mixture over medium heat, stirring constantly until it thickens and comes to a gentle boil.

   In a separate bowl, beat the egg yolks lightly.

   Once the pudding mixture has thickened, slowly pour about 1/2 cup of it into the bowl with the egg yolks, whisking constantly to temper the eggs.

   Pour the egg mixture back into the saucepan, stirring continuously for another minute.

   Remove from heat and stir in the butter and vanilla extract until fully melted and incorporated.

   Pour the pudding into serving dishes and let it cool to room temperature, then refrigerate until set, about 2 hours.
