Ingredients

• Graham cracker crumbs - 1 ½ cups
• Unsalted butter, melted - ¼ cup
• Cream cheese, softened - 24 oz
• Granulated sugar - 1 cup
• Baileys Irish Cream - ½ cup
• Vanilla extract - 1 teaspoon
• Eggs - 3
• Heavy cream - ½ cup
• Chocolate shavings - for garnish

Instructions

   Preheat the oven to 325°F (160°C).

   Combine graham cracker crumbs and melted butter in a bowl and press into the bottom of a 9-inch springform pan.

   In a large bowl, beat the cream cheese and sugar until smooth.

   Add the Baileys and vanilla extract, mixing until well combined.

   Beat in the eggs one at a time, mixing just until incorporated.

   Pour the batter over the crust in the springform pan.

   Bake for 50-60 minutes, or until the center is set.

   Allow the cheesecake to cool to room temperature, then refrigerate for at least 4 hours or overnight.

   Before serving, whip the heavy cream to soft peaks and spread over the cheesecake.

    Garnish with chocolate shavings and serve.
